Tracy is an amazing chef and caterer!  I have had the pleasure of eating Tracy’s food for several years, including at a wedding that she recently catered.  Not only does her food taste terrific, she uses organic, locally sourced produce that is fresh and in season.  She is creative, pleasant and goes above and beyond for her clients to give them what they want!  As a person with dietary restrictions, she is able to customize dishes for gluten intolerance, vegan or any need.  Her passion for healthy, really good food shines!!

I’m a pediatrician. For a long time, I’ve been careful about what I eat, not only because I feel an obligation to set a good example for the families I work with, but also because nutrition and health are important to me and to my family. … I began to exclude red meat from my diet 20 years ago. … I generally dread catered meals. … So I was surprised in the best possible way when I realized how delightfully different this meal would be. Everything on the table looked fresh and appealing, and it all tasted as good as it looked. A couple of the dishes, one of which involved quinoa, were entirely new to me. These were meals to be enjoyed without regret, as healthy and nourishing as they were delicious. DEMOS & TEACHING:

Tracy is a true gem and I am so happy she is in the Twin Cities.

I first heard about Tracy when she did a cooking demonstration for the MN Dietetic Association Annual meeting. She kept everyone engaged and entertained and provided an amazing meal. Not an easy task as her audience was dietitians!

Later that year I asked Tracy to do a cooking demo for my students in the Masters of Public Health Nutrition at the University of Minnesota. I asked her to teach my students how to do demonstrations for different audiences, and for children in particular. She was very engaging and gave all of us some GREAT ideas, like using round-edged children’s scissors to cut salad greens (instead of knives). She also taught us how to introduce difficult concepts to children, like “antioxidants”. She made a beet salad that was very tasty and colorful, a very easy way to eat veggies even for those that don’t like veggies.

Tracy also catered a lunch for me and my students. It was a vegan meal that was delicious. There were NO leftovers! And, Tracy delivers meals to my building every week, and the ones I have tried are absolutely delicious, packed with nutrients and, most are vegan and even gluten-free. One can’t ask for more! I am delighted to have Tracy around, and think of her often as I have learned much from her, not only in person, but also from her blogs and weekly emails introducing the meals she is making each week.   ~ Aida Miles, MMSc, RD, LD, University of Minnesota, School of Public Health, 2012

IMG_0841Tracy’s class was extremely informational. She offered a range of advice that was extremely helpful including health-related information and recommended kitchen tools. It was fun! I’ve been using and experimenting with the recipes to make up my own salads and slaws and it’s really yummy! With each bite you get so many different flavors.   ~ Tammy, 2011

I’ve been using the methods Tracy taught us during the cooking class. I never knew you could economize ingredients and use them for so many different dishes. Tracy taught us about new ingredients I’ve never tried or heard about, and since her class I’ve been purchasing and cooking with some of these new ingredients.  It’s delicious and it’s healthy!! Tracy was so cool, and I loved the food was great! It’s awesome that Tracy gave each of us a chef’s knife and taught us how to use different knives for different cutting and dicing techniques.    ~ Lee, 2011
